Ingredients

  • 1 cup almond flour
  • 4 large eggs
  • 1/4 cup unsweetened almond milk
  • 2 tablespoons cream cheese (or coconut cream)
  • 2 tablespoons erythritol or stevia
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • 2 tablespoons coconut oil for cooking
  • Sugar-free syrup for serving
  • Fresh berries (limited portion)

Instructions

  1. In a bowl, whisk eggs until fluffy.
  2. Add cream cheese and blend until smooth.
  3. Mix in almond milk and vanilla extract.
  4. In separate bowl, combine almond flour, sweetener, baking powder, and salt.
  5. Gradually fold dry ingredients into wet ingredients.
  6. Let batter rest 5 minutes to thicken.
  7. Heat coconut oil in non-stick pan over medium-low heat.
  8. Pour 1/4 cup batter per pancake.
  9. Cook 2-3 minutes until edges set, flip carefully.
  10. Cook another 2 minutes until golden.
  11. Serve with sugar-free syrup and limited berries.
