Ingredients
- 1 cup almond flour
- 4 large eggs
- 1/4 cup unsweetened almond milk
- 2 tablespoons cream cheese (or coconut cream)
- 2 tablespoons erythritol or stevia
- 1 teaspoon vanilla extract
- 1/2 teaspoon baking powder
- 1/4 teaspoon salt
- 2 tablespoons coconut oil for cooking
- Sugar-free syrup for serving
- Fresh berries (limited portion)
Instructions
- In a bowl, whisk eggs until fluffy.
- Add cream cheese and blend until smooth.
- Mix in almond milk and vanilla extract.
- In separate bowl, combine almond flour, sweetener, baking powder, and salt.
- Gradually fold dry ingredients into wet ingredients.
- Let batter rest 5 minutes to thicken.
- Heat coconut oil in non-stick pan over medium-low heat.
- Pour 1/4 cup batter per pancake.
- Cook 2-3 minutes until edges set, flip carefully.
- Cook another 2 minutes until golden.
- Serve with sugar-free syrup and limited berries.
