Ingredients
- 2 lbs Brussels sprouts, trimmed and halved
- 3 tablespoons olive oil
- 3 tablespoons honey
- 2 tablespoons balsamic vinegar
- 3 cloves garlic, minced
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/4 cup dried cranberries
- 1/3 cup toasted pecans, chopped
- 1 tablespoon fresh thyme
Instructions
- Preheat oven to 400°F (200°C).
- Toss halved Brussels sprouts with 2 tablespoons olive oil, salt, and pepper.
- Arrange cut-side down on a large baking sheet.
- Roast for 20-25 minutes until golden and crispy on the bottom.
- Meanwhile, whisk together honey, balsamic vinegar, remaining oil, and garlic.
- Remove Brussels sprouts from oven and drizzle with honey mixture.
- Toss gently and return to oven for 5-8 minutes.
- Remove and immediately sprinkle with cranberries, pecans, and thyme.
- Serve warm as a side dish.
