Ingredients

  • 2 lbs Brussels sprouts, trimmed and halved
  • 3 tablespoons olive oil
  • 3 tablespoons honey
  • 2 tablespoons balsamic vinegar
  • 3 cloves garlic, minced
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 cup dried cranberries
  • 1/3 cup toasted pecans, chopped
  • 1 tablespoon fresh thyme

Instructions

  1. Preheat oven to 400°F (200°C).
  2. Toss halved Brussels sprouts with 2 tablespoons olive oil, salt, and pepper.
  3. Arrange cut-side down on a large baking sheet.
  4. Roast for 20-25 minutes until golden and crispy on the bottom.
  5. Meanwhile, whisk together honey, balsamic vinegar, remaining oil, and garlic.
  6. Remove Brussels sprouts from oven and drizzle with honey mixture.
  7. Toss gently and return to oven for 5-8 minutes.
  8. Remove and immediately sprinkle with cranberries, pecans, and thyme.
  9. Serve warm as a side dish.
