Ingredients

  • 2 lbs ripe tomatoes, cored and roughly chopped
  • 1 large cucumber, peeled and chopped
  • 1 red bell pepper, seeded and chopped
  • 1 small red onion, roughly chopped
  • 3 cloves garlic, minced
  • 1/4 cup extra virgin olive oil
  • 2 tablespoons red wine vinegar
  • 1 teaspoon sea salt
  • 1/2 teaspoon black pepper
  • 2 slices day-old bread, crusts removed (optional)
  • Cold water as needed
  • Fresh basil for garnish
  • Diced vegetables for garnish

Instructions

  1. If using bread, soak in cold water for 5 minutes, then squeeze out excess water.
  2. Combine tomatoes, cucumber, bell pepper, onion, and garlic in a large bowl.
  3. Add soaked bread (if using), olive oil, vinegar, salt, and pepper.
  4. Working in batches, blend mixture until smooth in a blender or food processor.
  5. Strain through a fine-mesh sieve for ultra-smooth texture (optional).
  6. Adjust consistency with cold water if needed.
  7. Taste and adjust seasoning with salt, pepper, or vinegar.
  8. Chill for at least 2 hours or overnight.
  9. Serve cold, garnished with diced vegetables and fresh basil.
