Ingredients

  • 1/2 cup coconut oil, melted
  • 1/4 cup coconut butter
  • 2 tablespoons MCT oil (optional)
  • 2 tablespoons powdered erythritol or stevia
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon salt
  • 1/4 cup unsweetened cocoa powder
  • 2 tablespoons chopped nuts (macadamias, pecans)
  • 1 tablespoon chia seeds (optional)

Instructions

  1. Line a mini muffin tin with paper liners or use silicone molds.
  2. In a bowl, mix melted coconut oil, coconut butter, and MCT oil until smooth.
  3. Whisk in sweetener, vanilla, and salt until well combined.
  4. Add cocoa powder and mix until no lumps remain.
  5. Stir in chopped nuts and chia seeds if using.
  6. Divide mixture evenly among molds.
  7. Refrigerate for at least 1 hour until firm.
  8. Store in refrigerator for up to 1 week.
  9. Let sit at room temperature for 2-3 minutes before eating if very firm.
