Coconut Fat Bombs
High-fat keto snacks for sustained energy
Ingredients
- 1/2 cup coconut oil, melted
- 1/4 cup coconut butter
- 2 tablespoons MCT oil (optional)
- 2 tablespoons powdered erythritol or stevia
- 1 teaspoon vanilla extract
- 1/4 teaspoon salt
- 1/4 cup unsweetened cocoa powder
- 2 tablespoons chopped nuts (macadamias, pecans)
- 1 tablespoon chia seeds (optional)

Instructions
- Line a mini muffin tin with paper liners or use silicone molds.
- In a bowl, mix melted coconut oil, coconut butter, and MCT oil until smooth.
- Whisk in sweetener, vanilla, and salt until well combined.
- Add cocoa powder and mix until no lumps remain.
- Stir in chopped nuts and chia seeds if using.
- Divide mixture evenly among molds.
- Refrigerate for at least 1 hour until firm.
- Store in refrigerator for up to 1 week.
- Let sit at room temperature for 2-3 minutes before eating if very firm.
