Ingredients

  • 2-3 lbs grass-fed beef bones (marrow and knuckle bones)
  • 1 lb meaty bones (oxtail or short ribs)
  • 2 tablespoons apple cider vinegar
  • 1 large onion, quartered
  • 2 carrots, chopped
  • 2 celery stalks, chopped
  • 4 garlic cloves
  • 2 bay leaves
  • 1 tablespoon whole peppercorns
  • Fresh herbs (thyme, parsley)
  • Sea salt to taste
  • 12-16 cups filtered water

Instructions

  1. Roast bones at 400°F for 30 minutes for deeper flavor (optional).
  2. Place bones in slow cooker or large pot.
  3. Add apple cider vinegar and let sit 30 minutes.
  4. Add vegetables, herbs, and spices.
  5. Cover with water by 2 inches.
  6. Slow cooker: Cook on low 12-24 hours.
  7. Stovetop: Bring to boil, reduce heat, simmer 12-24 hours.
  8. Skim foam occasionally during first few hours.
  9. Strain through fine mesh strainer.
  10. Cool quickly and refrigerate. Remove fat layer when solidified.
  11. Store in fridge 5 days or freeze up to 6 months.
