Nutrient-Dense Bone Broth

Ingredients
- 2-3 lbs grass-fed beef bones (marrow and knuckle bones)
- 1 lb meaty bones (oxtail or short ribs)
- 2 tablespoons apple cider vinegar
- 1 large onion, quartered
- 2 carrots, chopped
- 2 celery stalks, chopped
- 4 garlic cloves
- 2 bay leaves
- 1 tablespoon whole peppercorns
- Fresh herbs (thyme, parsley)
- Sea salt to taste
- 12-16 cups filtered water
Instructions
- Roast bones at 400°F for 30 minutes for deeper flavor (optional).
- Place bones in slow cooker or large pot.
- Add apple cider vinegar and let sit 30 minutes.
- Add vegetables, herbs, and spices.
- Cover with water by 2 inches.
- Slow cooker: Cook on low 12-24 hours.
- Stovetop: Bring to boil, reduce heat, simmer 12-24 hours.
- Skim foam occasionally during first few hours.
- Strain through fine mesh strainer.
- Cool quickly and refrigerate. Remove fat layer when solidified.
- Store in fridge 5 days or freeze up to 6 months.
